The global poultry industry has seen major changes in the methods used to collect and process fresh eggs in the past. The applications of genetics and animal husbandry have greatly increased the line speed for poultry operation. This study aims to review the factors that influence egg quality traits worldwide. Eggs are a staple food in the human diet and are consumed worldwide. They represent the complete food required for well-being and are recognized by consumers as being versatile and healthy with a balance of essential nutrients. However, eggs are perishable and susceptible to contamination with certain microorganisms. Many affect the internal quality and the number of microbes on the surface of the eggshell. This paper provides an overview of egg quality and safety and discusses the various factors affecting egg quality.
